Ölrettich wächst schnell, bringt in kurzer Zeit starken Blattwuchs und bildet tiefgehende Pfahlwurzeln. Der Wurzelmassenertrag ist sehr hoch. Ölrettich wird wegen der starken Durchwurzelung auch "Senkrechtdrainage für den Boden" genannt. Er ist garefördernd für den Boden und rübennematodenneutral. Die Anfälligkeit für Kohlhernie ist nicht so stark wie bei anderen Kohlgewächsen. Schon im Jungpflanzenstadium ist eine starke Beschattung des Bodens zu erwarten. Nicht winterhart.
